Recipes for Tailgate Appetizers, plus a Spiked Sweet Tea

Football ... it's really all about the food and drink, right? Here are a few of our favorite tailgate recipes along with instructions on how to make a very yummy rum sweet tea.

Blue Cheese Dip

Perfect for serving with Bluegrass Beverages Market and Deli hot wings!
½ cup sour cream
½ cup crumbled blue cheese
¼ cup mayonnaise
1 small garlic clove, chopped
1 Tablespoon milk or buttermilk
Juice of ½ of a lemon
Kosher salt and freshly ground pepper
Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor or blender until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve. The longer it chills, the better it is! Perfect paired with Bluegrass Beverages Market and Deli hot wings along with a growler of fresh beer on tap!


Tennessee Tailgate Popcorn

4 bacon slices cooked until very crisp
1 1.3 ounce bag microwave popcorn
¼ cup grated Parmesan cheese
4 tablespoons butter, melted
2 teaspoons buttermilk Ranch dressing mix
¼ teaspoon freshly ground pepper
Cook bacon over medium heat until crisp. Drain on paper towel. Coarsely chop bacon. Pour popped popcorn into a large bowl. Toss with bacon, Parmesan cheese, melted butter, Ranch dressing mix. Sprinkle with freshly ground pepper and serve immediately.

Party Ham Rolls

2 packages (71/2 ounces each) small party rolls
1 stick butter
2 Tablespoons prepared mustard
2 Tablespoons finely chopped onion (optional)
2 Tablespoons poppy seeds
1 Teaspoon Worcestershire sauce
8 ounces boiled ham
8 ounces of Swiss or Cheddar cheese
Melt butter: add mustard, poppy seeds, onion, and Worcestershire sauce. Cook over low heat until onions are transparent. Without separating rolls, slice party rolls horizontally. Spread both sides evenly with butter mixture.  Fill evenly with ham and cheese.  Wrap each package tightly in foil. And refrigerate until ready to bake. Bake at 375 degrees for about 15 minutes or until thoroughly heated and cheese is melted.

Mandy Lou’s Sweet Tea

2 ounces Ron Miel Honey Rum
2 ounces of your favorite rum
4 ounces unsweetened tea
Lemon slices
2-4mint leaves
Add all mixed ingredients into a tall ice filled glass. Garnish with lemon and mint. This may be used for a large group by using one bottle of Ron Miel Honey Rum, one bottle of your favorite rum and one gallon of unsweetened tea. Mix in a large container with 3-4 lemons sliced and squeezed and 12-14 mint leaves. Add additional tea for a lighter version.
