Prosecco, a Sparkling Gem

Step aside Rosé; Prosecco is actually Italy’s most popular sparkling wine. Though often compared to Champagne, Prosecco is made with different grapes and a different winemaking method. (Prosecco= Prosecco grapes, Champagne= Champagne grapes)
What is Prosecco?
Prosecco grapes make up this favorite sparkling wine. The grapes transform into wine with the Charmat sparkling method or tank method. The main difference in using this approach and a traditional one is that the individual bottle as the vessel to turn a still wine into a sparkling one is removed. In the tank method, base wines are added together with the sugar and yeast mixture in a large tank. During the second fermentation, the CO2 released from fermentation causes the tank to pressurize.
Tank method sparkling wines have stronger “yeasty” flavors. Some say that this method produces a lower quality of the sparkling wine. However, there are still many quality Proseccos. This method is affordable (making it more popular with lower quality wines), but this just means you can get some lower cost, quality bubbly.
Because of its fruitiness, Prosecco makes the perfect mimosa! The wine amplifies the citrus flavors of the orange juice, AND it pairs well with brunch-style foods (eggs Benedict anyone?).

Strawberry Prosecco Slushie
• 5 ounces (about 1/3 cup) Prosecco
• 1 tablespoon fresh orange juice
• 1 teaspoon honey
• 1 cup frozen whole strawberries
• Garnish (optional): fresh strawberries and/or orange slices
Simply combine Prosecco, orange juice, honey, and frozen strawberries in the blender. Blend until smooth. Garnish with strawberries or an orange slice!
